SAFI FREE EXPRESS FLOUR MIXTURE FOR UNLEAVENED PASTRIES

This flour mix is ideal for making, gluten-free, dairy-free, egg-free, yeast-free, soy-free “leavened” sweet or savoury pastries..

We do not use any animal-derived ingredients; therefore, Safi Free products are vegan and free from contamination.

Ingredients: gluten-free flours (millet flour, sweet potato flour), tapioca starch, fibre blend (psyllium husk powder, bamboo fibre flour), raising agent (sodium bicarbonate), acidity regulator (citric acid).

Directions for use:

 

BRAIDED BRIOCHE (490g)

 

Ingredients:

  • 250g Safi Free EXPRESS flour mix
  • 55g powder erythritol (or powdered sugar) - it have to be powder!!
  • 1g of Himalayan salt
  • 1g sodium bicarbonate
  • vanilla powder or extract
  • 1 lemon peel (about 10g)
  • 30g apple cider vinegar (or freshly squeezed lemon juice)
  • 260g water at room temperature
  • you can add. Raisins, chopped soft dried apricots etc

 

To brush the top: 10g of freshly squeezed orange juice

 

Preparation:

Preheat the oven.

Weigh the dry and wet ingredients in 2 separate bowls, mix them separately and pour them together and knead for 2-3 minutes.

Rest the dough for 5 minutes.

Then divide the dough into 4 parts, twist 23 cm bars so that the centre is thicker and the ends are evenly thinned.

Loosely braid together.

Brush the top with orange juice.

Bake in a preheated 180 degree oven, bake for 50 minutes on the upper and bottom heater setting, then brush again with orange juice and bake at 200 degrees for another 15 minutes.

Let it cool down completely before consuming.
